Apple Turnovers

You will need:



  1. Combine sugar and cornstarch in a saucepan,then stir in milk until smooth.
  2. Cook and stir over medium-high heat until thickened and bubbly.
  3. Reduce the heat and cook and stir for 2 minutes.
  4. Remove from heat and stir 1 cup into yolks.
  5. Return the rest to the pan. Bring to a little boil and cook and stir for 2 minutes.
  6. Remove from heat and stir in vanilla. Cool slightly.
  7. Cover surface of custard with waxed paper then chill.
  8. Place apples in a bowl and put a bit of lemon juice.
  9. Add butter and combine sugar, cinnamon and cornstarch so you can mix with apples and set aside.
  10. Divide pastry into eight portions and roll each into a 5-in square. 11. Put filling off-center on each. Brush edges with milk.
  11. Fold over to form a triangle and seal. hit with tines of a fork.
  12. Make places where steam can escape on top.
  13. Place on greased baking sheets.
  14. Chill for 15 minutes.
  15. Brush with milk. Bake at 400° for 35 minutes.
  16. Serve warm with custard.
Yields 8 servings.
