Apple Turnovers
You will need:
- 1/3 cup sugar
- Milk
- 2 tablespoons cornstarch
- 2 Cups milk or half-half Cream
- 3 egg yolks, beaten
- 1 tablespoon vanilla extract
- 4 meduim apples cut in 1/4 slices
- 1 tablespoon lemon juice
- 2 tablespoons butter, diced
- 1/3 sugar
- 3/4 teaspoon ground cinimon
- 1 tablespoon pie
- pastry for the pie crust
- Combine sugar and cornstarch in a saucepan,then stir in milk until smooth.
- Cook and stir over medium-high heat until thickened and bubbly.
- Reduce the heat and cook and stir for 2 minutes.
- Remove from heat and stir 1 cup into yolks.
- Return the rest to the pan. Bring to a little boil and cook and stir for 2 minutes.
- Remove from heat and stir in vanilla. Cool slightly.
- Cover surface of custard with waxed paper then chill.
- Place apples in a bowl and put a bit of lemon juice.
- Add butter and combine sugar, cinnamon and cornstarch so you can mix with apples and set aside.
- Divide pastry into eight portions and roll each into a 5-in square. 11. Put filling off-center on each. Brush edges with milk.
- Fold over to form a triangle and seal. hit with tines of a fork.
- Make places where steam can escape on top.
- Place on greased baking sheets.
- Chill for 15 minutes.
- Brush with milk. Bake at 400° for 35 minutes.
- Serve warm with custard.
Yields 8 servings.
